cucumber etc salad!

I got this idea from Danika Hamer. So...props. :)
This recipe is delicious immediately and if you leave it overnight in the 'fridge, it'll make your knees weak--and I'm not even much of a cucumber fan.
Here's the recipe we're using right now (because recipes evolve, dontchaknow):
main ingredients
3 medium cucumbers, peeled and diced
2 yellow bell peppers, seeded and diced
1 bag (about a pound, I guess) of vine-ripened tomatoes, diced
1 medium red onion, quartered then sliced very thinly
sauce, to taste
Lemon juice
Red wine vinegar
Olive oil
salt
pepper
sugar
(I could give you proportions, but I really don't know myself. Just make sure you're happy with the sauce before you combine it with the main ingredients.)
For best results, leave in refrigerator overnight.
Oh man. Yes.

I could go for that. Thanks! I’m doing this diet called “Vegan Before 6″ where basically you eat vegan before 6:00 PM. It was invented by a food writer and restaurant critic for the NY Times. He needed to lose weight but didn’t want to give up his day job as a foodie. So far I’ve lost 13 pounds in about 8 weeks, and it’s been easy to stick to. Salads like this are why.
